I believe if I ever mentioned panning an instrument both left and right I was simply talking about doubles, like a double tracked guitar meaning the same part was recorded with two separate takes, then panning each one on opposite sides helps to really fill out the space and make that particular instrument sound a lot larger and more powerful in the context of the mix.
